Genus: Lactobacillus

Life > Eubacteria > Firmicutes > "Bacilli" > "Lactobacillales" > Lactobacillaceae

Members of this genus of bacteria are found in dairy products, meat, water, sewage, beer, fruits, on plant surfaces, and other situations. 

Lactobacillus acidophilus

The fermenting organism that produces acidophilus milk.

Lactobacillus bulgaricus

One of the microorganisms used in the fermentation of milk to produce yoghurt, cream cheese and mozzarella cheese. This species is also used in the production of the alcoholic milk products kefir and kumiss

Lactobacillus casei

Used in the later stages of production of Cheddar cheese.

Lactobacillus leichmannii

One of the microorganisms used in the fermentation of milk to produce the alcoholic drink called kumiss.

Lactobacillus plantarum

Used in the later stages of production of Cheddar cheese.
